Three different families can share a hindquarter, each getting an equal share of T-bone steaks or & sirloin steaks, rump steaks, topside & silverside steaks or roasts or butterfly steaks, goulash from thick flank, short ribs, mince from the thin flank, meaty beef bones, shin, knuckle bones and trimmed off fat (minced).

Knuckle bones meat comes from the joints of the cow, rich in flavor and collagen. Ideal for slow cooking, it imparts a deep, savory taste to soups, stews, and broths.
