Three different families can share a hindquarter, each getting an equal share of T-bone steaks or & sirloin steaks, rump steaks, topside & silverside steaks or roasts or butterfly steaks, goulash from thick flank, short ribs, mince from the thin flank, meaty beef bones, shin, knuckle bones and trimmed off fat (minced).

Commercial stewing beef consists of cubed, tough cuts of beef ideal for slow cooking. When simmered over low heat, it becomes tender and flavorful, making it perfect for hearty stews, soups, and casseroles.
