Three different families can share a hindquarter, each getting an equal share of T-bone steaks or & sirloin steaks, rump steaks, topside & silverside steaks or roasts or butterfly steaks, goulash from thick flank, short ribs, mince from the thin flank, meaty beef bones, shin, knuckle bones and trimmed off fat (minced).

Commercial topside steaks are lean, flavorful cuts from the inner thigh of the cow. They are best suited for slow cooking or marinating to enhance tenderness and are popular for roasts, stews, or grilling.
